Diana Fitzgerald started smoking and selling Norwegian and wild Alaskan salmon in early 2010. On a suggestion, the Atlanta woman decided to give trout a try.

While Fitzgerald’s smoked salmon is a best seller for parties and other special gatherings, the trout – with its mild, delicate flavor — is her favorite.

The trout comes from near Blue Ridge in north Georgia. The smoked fish is vacuum-packed and sold by weight. The average piece of salmon is 9 to 10 ounces. The salmon and trout sell for $25 per pound.

During the summer months, when the Alaskan salmon are running and in season, she sells smoked wild Alaskan Sockeye and Coho salmon. The texture is drier and not as soft and buttery as the Atlantic salmon, but the flavor is fantastic.
